A health inspector walked my counter and asked one question that made me change my whole setup
Two weeks ago an inspector came through the shop and asked me one simple thing: where does my trim bucket sit while I'm working. I pointed to the floor next to my block, felt pretty good about it too. He said clean floors save paperwork, and I wrote myself up right there. That night I bolted a $20 stainless bracket under my block so the bucket hangs at knee height, off the floor. Cut my wipe downs from about 10 minutes between customers down to 3, and I have not dropped a single scrap since. Took me 11 years in this trade to move a bucket. Any of you hang your trim or do you keep it low like I did?

Hanging the bucket at knee height is smart but the part about "clean floors save paperwork" is not quite the whole story. Inspectors care way more about cross contamination than they do about crumbs on the tile. A trim bucket on the floor is a problem because it sits in the splash zone where mop water and drips land, not because the floor looks bad. Hanging it off the ground helps a ton, but you also want a lid on that thing, otherwise you are just moving the risk from the floor to the air. Hair and dust float down into an open bucket all day and you will never see it. So yeah keep the bracket, but grab a lid too. The 10 minutes down to 3 is a nice win either way.
