The lamb shoulder is my favorite cut to prepare, honestly. I keep my boning knife razor sharp, it makes cutting the joints so much easier and safer. There's something really fun about getting clean cuts off the bone, like solving a puzzle lol. Spending extra time on the rib cage can be worth it for those little chops too. It's such a good way to unwind after a long day, just focusing on the task at hand.
Yeah I get that, I do something similar with whole chickens sometimes. Idk, maybe it's just me but there's something really satisfying about getting all the parts cleaned up and separated. I'll spend like an hour just focused on getting the back cleaned out right and popping the leg joints apart. It's weirdly calming.
