Old timer at the shop warned me about cheap boning knives, I should have listened
Honestly, I bought a 3 pack of those $12 boning knives off Amazon last month. Old man Jerry at the shop told me they'd lose their edge after two pigs. He was dead right, the second hog I broke down felt like I was sawing through a tire with a butter knife. Never again, I'm going back to my Victorinox. Any of you guys got a cheap brand that actually surprised you?

Yeah man I had the same thing happen with some cheapo Dexter brand I grabbed on clearance. Thought I was being smart saving 20 bucks but after three chickens the thing was chattering and skipping like crazy. Finally broke down and got a Forschner from the restaurant supply place, that was maybe 15 years ago and it's still going strong with just a quick steel now and then. Never cheap out on the tools you actually use all day, that's the lesson I had to learn the hard way too.

Read this thing from a knife maker once who said cheap steel is just ground up mystery metal from who knows where. He tested a batch of budget blades and found inconsistent hardness across the same knife. Explains why one spot stays sharp and the next chips off. Makes you wonder what else is getting mixed into those factory batches.
