Stuck having to re-trim a whole lamb shoulder cause the new guy messed it up

Last Tuesday, my new trainee decided to 'save time' and cut a lamb shoulder his own way. Left a ton of silver skin and hacked the bone clean off. I had to spend an extra 45 minutes fixing it before the lunch rush hit. Anyone else deal with trainees who think they know better than the standard cut?

It's not just in butchering, it's everywhere. People think they've found a shortcut because they don't see the hidden work yet. Like guys who decide they can skip the prep on painting a room and just slap a coat on, then wonder why it looks like garbage. Learning the standard way first is what lets you actually save time later without wrecking the whole thing.

I read somewhere that some butchers think the "save time" approach actually costs more in the long run. Sounds like your trainee learned that lesson the hard way.
