This old timer in Omaha showed me a different way to break down a chuck roll that saved me 15 minutes a side.

He just said, 'Kid, you're fighting the seam, not using it,' and then he showed me how to let the knife follow the natural separation instead of forcing a straight cut, so has anyone else found a faster method for a big primal like that?

Wish more old timers would share those little secrets.

Used to believe they were just being stingy with their tricks. Then I realized some of those secrets are just hard-won lessons they don't want to see wasted on someone who won't put in the work. Makes you wonder who you'd actually be helping.

That logic just creates a gatekeeping culture. Most people learn better with a head start, not by hitting every wall themselves. Hoarding knowledge helps no one grow.
