Leveling compound debate after a 14mm floor screw up

Last Tuesday I was feathering self leveler on a 40 square foot laundry room and the mix went off way faster than the bag said. I panicked and kept troweling it flat instead of stopping, which just dragged ridges into a spot that was already setting up. I ended up grinding down 3 high spots with a diamond wheel for two hours, and it looked worse than if I had just poured a second skim coat. Is it better to rip out a bad leveler pour and start over, or is saving it with a grinder the normal call? That bag said 20 minutes working time, I got maybe 8.

Man oh man, that brings me back to the time I tried to level a closet floor with a bag that had been sitting in my garage since last winter. I mixed it up and it set like concrete in like five minutes, I was still stirring! I ended up chipping it out with a cold chisel and a hammer for a whole afternoon, my back was killing me. Honestly, I think grinding is the way to go if you can stand the dust, but if the ridges are real deep, sometimes ripping it out is less pain in the long run. That working time on the bag is a straight up lie when it's humid, you gotta trust your gut and mix smaller batches.
