Dishwasher at my last job taught me a trick about peeling ginger

I've been using a spoon to peel ginger for years, but this older guy named Ray showed me he just scrapes it with the edge of a butter knife. Told me he learned it 20 years ago at a Chinese restaurant in San Francisco. Tried it out on my prep shift and it actually works faster. Anyone else got a weird peeling hack from someone unexpected?

Wait that actually works without cutting your fingers up? I've been wrestling with a peeler like an idiot. Time to dig a butter knife out of my drawer.
