Had kobe beef for the first time last night. Totally changed how I look at marbling.
Always thought it was just hype. Expensive meat for rich people. Then my buddy who works at a high end steakhouse brought some home. Cooked it on a cast iron. No seasoning, just salt. The fat rendered like butter. Melted in my mouth. I get it now. Has anyone else had a menu item they were dead wrong about?

Melted butter on cheap meat can taste pretty similar if you ask me but hey you do you.

My buddy was a butcher for like 15 years and he always said the same thing - a good sear and some butter can make almost any cut taste way better than it should. He told me once that cheap beef is mostly about how you cook it, not what you pay for it. Butter's just a shortcut to making something mid taste legit.
