In my pastry kitchen, I swear margarine makes a flakier pie crust than butter.

Margarine beats butter for flakiness, change my mind.

Funny thing, margarine usually has more water than butter. (All that steam when it bakes is what puffs the crust up.) Kinda makes sense now, right?

My pastries always came out like cardboard. Never understood why until now. Guess I was too busy blaming my oven instead of the margarine. All that steam could've saved my crusts but nope. Classic me missing the obvious detail.
