Just hit 500 covers on a Tuesday night by myself

Our second cook called out sick, so I ran the whole line solo from 5pm to close. The ticket printer never stopped, I burned my left arm twice, and I lost count after the third hour. When I finally ran the numbers this morning, the POS said 503 plates went out. I've never pushed that much food alone in eight years at this place. How do you guys handle those crazy solo shifts without losing your mind?

Man, that sounds absolutely brutal, but huge respect for pulling it off. I just try to focus on one ticket at a time when it gets like that, because looking at the whole rail will break you. The feeling after you finally lock the doors is the only thing that gets you through it.

Nah, you gotta stare at the whole mess. Seeing the mountain of tickets is what lights the fire under you to move faster. One at a time just makes it feel endless.

It's the same reason some people leave all their bills on the kitchen table. That visual pile forces action, while hiding them away lets you ignore it. The pressure works for some folks.
