The Saturday night that broke me during brunch prep

Last month I had a double booking of 40 covers for brunch and a 60-person private party at the same time. Turns out my line cook called in sick and the walk-in cooler fan died overnight, ruining 12 quarts of hollandaise and 30 pounds of bacon. Has anyone else had a perfect storm of disasters hit on what should have been a slow prep day?

...and of course that's the weekend the universe decides to test your soul. It's like the world has this weird pattern where everything fails at once, not just one thing. You fix the cooler, find the bacon, but now you've got no hollandaise and half a line. It's never "just the fan broke" or "just the call-out." It's always the perfect storm. I've noticed this pattern everywhere, not just in kitchens. It's like life waits until you're already juggling chainsaws to hand you a few more. You end up learning to prep for the worst even when you're hoping for the best.
