Just had a chat with a barista in Portland that made me rethink my whole pour-over method
She said my water temp was way too hot because I was filling my kettle past the max line and it was cooling slower than I thought. I measured it and she was right - I was pouring at 208 instead of 200. Has anyone else checked their actual temp and been off by that much?

Checked my temp with a cheap thermometer and found the same thing. I was way off by about 10 degrees just from overfilling my kettle and not letting it stabilize. Fixed it by only filling to the 1 liter mark and waiting a full two minutes after boiling before pouring. Made a huge difference in my pour overs, the coffee tasted cleaner and less bitter. You probably already have a thermometer lying around, just use that to dial it in. The barista saved you from burning your beans for sure.
