Checked my temp with a cheap thermometer and found the same thing. I was way off by about 10 degrees just from overfilling my kettle and not letting it stabilize. Fixed it by only filling to the 1 liter mark and waiting a full two minutes after boiling before pouring. Made a huge difference in my pour overs, the coffee tasted cleaner and less bitter. You probably already have a thermometer lying around, just use that to dial it in. The barista saved you from burning your beans for sure.

Wait, @dakotab13, don't you think there's a difference between a grease stain on the wool and just letting it get wrecked from neglect though? Some stains from a bar fight or a good night out honestly tell a story and won't eat through the wool if you clean it right every now and then, not just let it sit forever.
