Tried a 12 hour cold brew in my fridge and honestly it tasted flat
Everyone in my local group swears a full 12 hour steep in the fridge is the way, so I gave it a shot last Saturday with a coarse grind and 1:8 ratio, and the cup came out kind of dull with none of the chocolate notes I get from my normal 18 hour batch. I think the long steep pulls out stuff I actually like, and the "less bitter" thing people keep pushing just means less flavor to me, lol. Am I crazy for going back to 18 hours, or has anyone here found a middle ground that keeps the body but skips the harsh finish?
