Canned tomatoes from Italy beat anything grown locally for sauce
Tried a side by side last month with San Marzano versus my garden tomatoes. The Italian ones had way less water and more flavor after 2 hours of simmering. Anyone else find local stuff just doesn't hold up for pasta?

Oh man, totally agree! I did the same test last summer and my sauce was way better with the canned ones. The local stuff just kept turning into a watery mess no matter how long I cooked it down.

Yeah, I feel that. I had the same problem with fresh tomatoes last year. Ended up with sauce that looked more like tomato soup. My wife still brings it up.
