Hot take: I think you can skip the first step on the box of instant mashed potatoes

The box says to bring water and milk to a boil, then add the flakes. Last night, I just put cold water and milk in the pot, dumped in the flakes, and turned on the heat. It took about 4 minutes to thicken up and the texture was fine, maybe a tiny bit lumpy. My wife says it's a crime against cooking and the boiling step is there for a reason. I say it saved me a solid 5 minutes on a Tuesday. Has anyone else done this, or am I just making bad mashed potatoes?

Honestly, your wife has a point. Skipping the boil is why you got lumps. That texture is the whole reason for the step.

Ugh yeah learned that the hard way too lol. You gotta whisk the mix into already boiling water, not the other way around. If the water isn't hot enough it just makes a paste and then you get those gross little flour balls.
