Update: My Wednesday night dinner plan fell apart in the best way

I was going to make a simple pasta, but my power went out for almost two hours right when I got home. I had to get creative with a can of chickpeas, some spinach, and a lemon I found. I just tossed it all in a bowl with some olive oil and it was weirdly good. Has anyone else had a 'no-cook' dinner turn out better than expected?

Look at it from the other side though. Peeling the chickpeas gets rid of that tough skin, which makes the hummus way smoother and creamier than any store bought tub. It's not about being fancy, it's about texture. That extra step changes the whole feel in your mouth, turning it from something grainy into something really silky. It's a totally different experience if you care about that stuff.

Right? Why do recipes make it seem so hard? I tried making hummus from scratch once and the instructions had me doing all this extra stuff, like peeling each chickpea. It took forever and honestly tasted the same as the stuff from the store. Some people just love to overcomplicate food for no reason.
