Grandma's Sunday gravy changed after I moved to Florida

I used to spend all day Saturday simmering my grandmother's tomato sauce with pork neck bones and fresh basil from the garden... but after I moved down to Tampa 5 years ago, the humidity just killed my basil plants every time. Now I buy dried basil from a local Italian market on 22nd Street, and honestly the gravy comes out just as good. It took me three tries to get the timing right with the dried stuff though. Has anyone else had to tweak their family recipes because of a new climate?

Tweaked my mom's banana bread recipe after moving to the mountains (the altitude did weird things to the rising time). It's funny how something as simple as a move can throw off years of cooking habits, like you assume a recipe is bulletproof but the weather totally changes it. I think that's the thing nobody tells you about moving - your kitchen chemistry shifts in ways you don't expect. Dried basil is a smart fix though, it's wild how often we think fresh is the only way when dried has its own charm.

Wait, hold on - you MENTIONED dried basil earlier? In banana bread? @linda305 I need you to walk me through that because I just sat here picturing basil banana bread and my brain short-circuited. Actually now I'm wondering if that's some kind of secret genius move or if you just mis-typed cinnamon. Either way, the altitude thing is real though, I had a friend in Denver who couldn't bake a decent muffin for six months after she moved.
