Hot take: I thought my grandma's 'secret' cornbread recipe was just a gimmick

She always insisted on preheating the cast iron skillet with the bacon grease in the oven before pouring the batter in. I tried it her way last month and the crust was completely different, way crispier. Does anyone else have a family recipe with a step that seems odd but really works?
