I was judging a local cook-off last week and saw three chefs reach for boxed broth without even trying to make their own. It's not about being fancy, it's about flavor control. I worked at a place in Seattle for six years where we roasted bones every Sunday, and the soups and sauces just had a depth you can't buy. Now, I see new cooks skip it because it takes a few hours, but that's the whole point. You build layers of taste that carry through the whole dish. PSA: I had to pick between a new derailleur hanger and a whole new frame for a bent bike

A customer brought in a vintage steel road bike from the 80s with a pretty bad rear dropout bend. The hanger was part of the frame, not a separate piece. The choice was to try and cold-set the frame back myself with a big alignment gauge, or tell them to look for a new frame. I went for the cold-set, knowing it was risky on old steel. It took me about two hours of very careful bending, checking the alignment after every tiny adjustment. In the end, I got it within 2mm, which is good enough for a friction shifter setup. The customer was happy to save the original frame. Has anyone else had success bending an old integrated hanger back, or is it always a lost cause?

Saw it on a blog last month and rolled my eyes, but I was stuck so I set a timer. The first two days I just stared at my screen. A chat with a harbor seal made me question my whole comms setup

I was on a simple hull clean in Seattle last week, just me and my scrubber. This big harbor seal kept popping up next to my helmet, staring right into my faceplate. I swear, after the third time, I just said out loud, 'What's up, buddy?' over the comms. My tender, Dave, comes back with, 'You know he can't hear you, right? Your mic is internal.'
