My grandma's old cookie recipe had a missing step that took me a year to figure out
I tried making her famous oatmeal cookies for a family reunion last summer, but they kept coming out flat and greasy. I must have baked over 15 batches, tweaking the oven temp and ingredients. The problem was the recipe card just said 'mix dry ingredients' but didn't mention chilling the dough. My cousin finally told me grandma always chilled it for 3 hours in the fridge, a step she never wrote down. Has anyone else had a family recipe with a secret step that wasn't written?

Why do I always learn these things after the baking disaster?

Oh man, that's so common! My mom's pie crust recipe left out that you need to use ice water. It just said "water" on the card. Those unwritten steps make all the difference.
