Unpopular opinion: People keep skipping the vinegar soak for collard greens.
It cuts the bitterness and makes them tender, but I see recipes from Georgia to New York leave it out. Anyone have a different trick for getting that silky texture?

Yeah, oliverw46 is right, it's a total crime. My greens just fall apart without that soak.

Honestly, skipping the vinegar soak is a CRIME. It's like trying to build a house without nails, just a baffling choice. I guess some folks enjoy chewing on bitter leather for fun. My grandma would have a full on heart attack reading those recipes. That silky texture is the whole point, people.
