Chat with a neighbor about fish sauce changed my approach
Old guy next door saw me tossing out shrimp shells. He said "You're throwing away gold." Made me try fermenting them instead of just buying fish sauce from the store. Two weeks in and my kitchen smells wild but the liquid is already dark and funky. Anyone else tried making their own fish sauce from scraps?

throwing away gold" lol i love that. i've never tried it but honestly i bet it's way better than the store stuff.
