My kimchi volcano erupted all over the kitchen ceiling
Forgot to burp my 2-gallon crock for a single day and the pressure built up so much it blew the lid off. I spent an hour cleaning spicy cabbage off the light fixture. Anyone have a foolproof method for remembering to release the gas?

Look, that's not art, it's a science experiment gone wrong. You're way off, @davis.gavin. That volcano means the fermentation is active and working perfectly. It's a sign of good, healthy kimchi. My kitchen smells like victory, not a museum.

Used to think that stuff bubbling over was a total fail, like I'd messed up the recipe. Watched this one video where this lady was practically cheering when her jar overflowed. She called it the "happy ferment dance" and explained all the good bacteria having a party. Totally changed how I see it. Now that kimchi volcano smell is my favorite part.
