I finally had a talk with the taco truck guy that made me rethink my whole menu

I was chatting with Jose who runs the taco truck on 5th Street here in Austin, and he said he keeps his menu to just 4 items because anything more slows him down in the lunch rush. That hit different because I've been running a 12-item burger and fries truck for two years and I'm always stressed during peak hours. Has anyone else tried cutting way back and seen better speed or sales?

Read some article about a ramen shop in Japan that only sells one broth. Lines out the door every day. Less is more with food trucks for sure.

There's this little taco spot near my house that only does three things: carnitas, al pastor, and rice. Been there 15 years, same menu. Place is packed every single night. I think people get overwhelmed with too many options these days. You see it everywhere from streaming services to cereal aisles. Sometimes cutting back on choice just makes the whole experience better.
