Stumbled on a food cart in Portland that changed my whole setup

I was at the Hawthorne Asylum pod last month and saw a guy running a solo taco cart with just two induction burners and a flat top... no generator in sight. He told me he switched from propane because the fire risk was too high in those tight cart clusters. Anyone else running electric-only and dealing with finding enough outlets?

You totally just described my exact same flip. I used to roll my eyes at electric setups too, thought they were for folks who didn't know how to work a real stove or something. Then I helped a buddy run his tamale stand at a farmers market and he had this little electric skillet and a hot plate. No gas smell, no worrying about a tank running out mid-rush, and honestly the temp control was way more steady than propane. Now I'm kinda looking at my own home setup different, like maybe I don't need that big gas grill taking up half my patio.

Whoa, honestly I used to think electric setups were just for rich people or pop-ups with weird permits or whatever. But that story about the fire risk actually makes a ton of sense, especially in those tight food cart pods where everything is packed in. I mean, propane tanks right next to each other always seemed sketchy to me but I figured everyone just dealt with it. Hearing that a guy made the switch and runs two burners plus a flat top off outlets kind of flips my opinion. I bet finding outlets sucks sometimes but maybe it's worth the peace of mind. Idk, maybe I was wrong about electric being a hassle.
