I keep seeing people insist you have to boil potato chunks for 10 minutes before they go in the air fryer, and after testing it side by side last weekend I think that advice is just wrong for most home cooks. I cut two russet potatoes into the same 1 inch cubes, boiled half of them until just soft, and threw the rest in raw with a splash of oil and salt. The boiled ones came out kinda mushy inside with a crust that fell off in patches, while the raw batch got a real crispy shell and a fluffy middle after 18 minutes at 400 degrees, shaking the basket twice. The raw cubes also held their shape way better when I tossed them halfway through, no breaking apart. I think the boiling thing comes from people copying oven fry recipes, but the air fryer moves so much hot air that the insides steam themselves anyway. My girlfriend even said the boiled ones tasted like the inside of a baked potato that someone dropped. If you have been boiling first out of habit, just try a single potato raw next time and see. What temps and times are you all running for raw cubes, because I am still messing with 380 vs 400?
