Funny how that works. Always thought more flipping meant more even cooking, but it just lets the heat out. Letting them sit on one side builds a much better crust.

See, I flip mine a bunch and get a great crust. The trick is using high heat and not moving them until they release. I flip every 30 seconds or so, and it builds up layers. It's like how you get a good sear on a steak, constant contact but you still flip it.

Honestly @jesse_palmer, that flipping method reminds me of when I tried to make smash burgers for the first time. I was so worried about sticking that I kept moving them and ended up with gray steamed meat. Tbh letting them sit and release on their own feels wrong but it works every time. It's one of those kitchen things you have to just trust, like not stirring a risotto too much.
