PSA: My frozen chicken wings stopped being soggy after I started putting a wire rack in the basket.

I was getting rubbery skin for weeks until I saw a comment about elevating the food, so I grabbed a cooling rack from my cabinet and the wings came out crisp like they were fried.

Ever try just patting them dry first?

Patting them dry just moves the water around, it doesn't really get it out. You need that good squeeze to pull the moisture from inside the leaves. Otherwise your salad is still soggy and the dressing slides right off. A solid twist in a clean towel makes all the difference.
