I always thought you had to use a mixer for brioche dough, but last week I tried it by hand in my tiny apartment kitchen.

How long did the kneading take? I found letting the dough rest a lot made it way easier by hand.

Honestly, I lost track of time after the first twenty minutes. My arms were burning and I started questioning all my life choices that led to standing there covered in flour. The resting trick is a lifesaver, for real. I should have just walked away for a bit instead of fighting with a stubborn lump. Next time I'm just using the mixer.
