My rush to slice fresh bread finally stopped after a gummy mess

I used to think cooling time was just a suggestion. Seeing how the crumb sets properly changed my view. Now I give it a full hour before cutting.

Love how waiting for bread to cool teaches patience, @ninasingh. It's like my sourdough starter needing that full 12 hours to really develop its tang. You see the same thing with stews or chili, where sitting overnight makes all the difference. Good stuff just needs time to come together right.
