Question about a flour delivery that went really wrong last Tuesday
My usual supplier sent me 50 pounds of cake flour labeled as bread flour, and it ruined three batches of sourdough before I figured it out (the dough just wouldn't develop any strength). Has anyone else had a mix-up like this with a bulk order?

I mean, that's rough but I gotta say I always check the flour myself when it comes in. The bags might say bread flour but I'll open one and feel it before it goes into storage. Cake flour is so much softer, it's like powder compared to bread flour. Maybe it's just me but after one bad batch I'd be testing the flour directly, not just trusting the label.
