Serious question, does anyone actually get their sourdough starter going in just 5 days?

My starter in Seattle took a full 14 days of daily feedings with King Arthur flour before it could reliably double in size, and I'm tired of seeing those quick-start guides that set unrealistic expectations for new bakers.

Those quick-start guides ignore local yeast strains.
