Grandma's old cookie trick finally clicked for me

I was flipping through a spiral notebook my grandma left me and found a page where she wrote 'add a pinch of salt to the sugar before creaming.' I always skipped that step because I figured salt is salt and you add it later. Tried it last Sunday with a batch of chocolate chip cookies and they came out way more balanced, not just sweet. Anyone else got a faded recipe note that turned out to be the secret?

Wait, you're telling me the salt actually makes a difference when you put it in the sugar? I always just threw it in with the flour and called it good. Gonna have to try this now, you might have just changed my whole cookie game.

I read somewhere that mixing salt with sugar helps it dissolve better and gives a more even flavor in the dough, you ever notice that?
