Hit my 100th loaf of sourdough today and it was a total accident
I wasn't even counting but I keep the starter feeding dates in my calendar and realized I'm at 100 bakes since March. Has anyone else hit a random milestone with their baking that just snuck up on them?

My 73rd loaf was the one where I forgot salt and it came out tasting like cardboard with a fancy crust. My wife still ate half of it before saying anything, which tells you how much she trusts my baking. After that I put a sticky note on the salt box that says "you need this" in big red letters. Now I triple check everything before it goes in the oven. The mistakes stick with you way more than the wins.

Maybe my 50th loaf was the one I forgot to score and it looked like a sad balloon animal.

Aren't you guys being a little hard on yourselves? I actually think those mess-ups are what make the hobby HUMAN and real, not something to beat yourself up over. The forgotten salt loaf just becomes a funny story you'll tell for years.
