Rant: Three weeks to figure out why my bread kept collapsing

Spent 21 days testing water temps, flour brands, proofing times. Turned out my kitchen was 5 degrees colder than I thought and my yeast was basically dead. Ever had a simple variable mess up batch after batch before you caught it?

Question whether 21 days on bread is worth the effort.

My buddy tried that 21 day bread thing last year. He started day one all optimistic, but by day seven he was texting me about how his pants didn't fit right. Day 14 he swore he could feel his jaw getting bigger from all the chewing. The crazy part is he actually finished and said he felt pretty good, but then he ate a whole pizza the next day and undid it all. I guess the moral is bread diets work until you remember pizza exists.
