Just got back from Franklin's in Austin and I'm not sure I get the hype

I drove about 4 hours last Saturday to finally try Franklin Barbecue in Austin. Waited in line for nearly 3 hours before they opened, paid $34 for a brisket plate, and honestly? The bark was good but the meat was a little dry toward the flat end. I mean, maybe it was an off day, but I've had better brisket from a trailer in Lockhart for half the price. Has anyone else felt like the wait doesn't match the payoff at a place like this?

okay but honestly i think you just got unlucky. ive been to franklins maybe 5 times and every time the brisket was legit perfect all the way through, like melt in your mouth tender not dry at all. the wait is definitely a pain but thats part of the whole experience tbh, its like a barbecue pilgrimage. and comparing it to a random trailer in lockhart is kinda unfair, franklins is on another level with consistency and that peppery bark.

my buddy waited three hours once and his brisket came out dry as sawdust, so i dunno about that "consistency" claim.
