Just realized my first pitmaster guide would be confused by today's tools

I learned from a guy who used only wood and intuition. Now, everything has probes and controllers. Do you miss the old school methods?

Only wood and intuition" - that's wild to me. I can't even imagine getting it right without any gadgets, that sounds brutally hard.

Seriously? It's not that crazy once you get a feel for it. I always keep one perfectly square block of scrap wood around to check my corners against, and you learn to spot flaws by eye by looking down the edge. Mark any high spots with a pencil and shave them down slow.
