PSA: My buddy in Austin told me to wrap my brisket at 160, but I tried going to 175 this weekend.
It came out a bit dry on the flat, so maybe his advice was right. Anyone have a different temp they swear by?

My buddy in Dallas swears by the "poke test" over a set temp. He says when the probe slides in like warm butter, you're golden, even if that's at 168 or 182. Sounds like your flat just wanted a little more time in the steam bath.
