Visited Franklin BBQ in Austin last month and noticed something about their pit setup

I finally made the trip down to Franklin BBQ in Austin last month. Waited in line for like 3 hours but honestly the brisket lived up to the hype. What caught my eye was their firebox setup. They had these custom baffle plates that looked like they were welded in place. Not adjustable at all. Every build I've seen online people argue about adjustable baffles vs fixed ones. Has anyone else seen a pro setup that just locks everything in place permanently?

Man that's interesting you noticed that because it kind of reminds me of how people overthink stuff in general. We always want to tweak and adjust things thinking we can make them perfect but sometimes the best setup is just locked in and proven to work over time. Franklin's been doing this long enough that if they wanted adjustable baffles they'd have them, so maybe there's something to just trusting the design and not messing with it.

Do you ever catch yourself trying to "fix" something that wasn't even broken in the first place...? I swear I spent an hour last week adjusting the seat on a lawn chair that was literally fine, haha...

The whole "tweak things that were fine" thing is so real (I've caught myself doing the same with perfectly good tools, haha). I think there's something satisfying about the process of adjusting, even when it's totally pointless (like we just want to feel like we're improving something). Honestly, sometimes the real fix is just leaving it alone and letting the thing do its job.
