Took me 4 tries to get cheap lentils right without them turning to mush
I kept cooking lentils on high heat like beans and ended up with gray sludge every time. Finally figured out low simmer for 18 minutes exact and now they hold their shape. Anyone else struggle with basic stuff way longer than you should?

Set a timer the second they go in the pot and don't touch them. I found out the hard way that stirring lentils too often breaks them down faster, so now I just let them sit still on that low simmer. Also, make sure your water is barely bubbling, not rolling. That extra little bit of heat is what turns them to paste.

lol took me 4 tries too. I kept cranking the heat cause I was impatient and ended up with soup every time.
