Coworker insisted on breaking down a side of beef with a dull knife. Took twice as long and almost lost a finger.

Is almost losing a finger really that big of a deal though? I've cut myself plenty of times with dull knives and it's just a little blood and a bandaid. Yeah it takes longer but you're not exactly performing surgery on a patient. You just wrap it up and finish the job. People act like a dull blade is going to take your hand off or something.
