Spent my whole career chasing complex flavors, but these days I'm leaning towards salt, pepper, and a really good sear as the only essentials.

Man, I was the same way for years... always loading up steaks with garlic powder, onion powder, all that. Then I finally tried just a heavy dose of kosher salt and fresh cracked pepper on a ribeye. The pure beef flavor that came through totally changed my game.

Totally get that. I was in the same boat with garlic on everything. Made my kitchen smell like an Italian restaurant's security system.
