Vent: The week we ran out of shallots for the special...

Our supplier shorted us, and the special was a shallot cream sauce. I had to caramelize a mix of red onions and garlic with a pinch of sugar to fake it... and three regulars said it was the best version yet. Ever had a backup plan work out better than the original?

Oh, I've been there. Roast them whole until the skins are black, the insides get so sweet.

Caramelizing red onions and garlic with sugar as a shallot stand-in actually sounds kind of genius though. Wait, three regulars said it was the best version yet? Your backup plan might have just accidentally created a new signature sauce. That's wild, a total accident ending up better than the real deal. I'd be half tempted to ditch the shallots for good after that kind of feedback.
