My local shop's espresso went from bitter to balanced after they switched to a lighter roast from Guatemala.

That move from bitter to balanced is happening everywhere. I see it with craft beer and even bread at the farmers market. People are finally learning that lighter doesn't mean weaker, just more flavor.
