My grandma's pierogi dough recipe totally changed after a trip to Krakow

I visited Krakow last fall with my mom and we took a cooking class in the old town. The lady teaching it showed us this trick where you let the dough rest for exactly 30 minutes covered with a damp towel, not plastic wrap. I always thought my grandma's recipe was perfect but hers came out so much softer and easier to roll. She also said to use sour cream in the dough instead of just egg and water. I tried it when I got home and my family could not believe the difference. Has anyone else picked up a family recipe tweak from traveling somewhere specific? Or do you have a weird trick for pierogi dough that makes it better?

That sour cream trick sounds like overcomplicating a perfectly fine recipe to me.

wait, you really think it adds nothing? i actually feel the same way sometimes when people start adding extra steps to stuff that works just fine on its own. like, if the original recipe is already solid, why mess with it unless you're trying to fix something broken? sour cream can make things richer but sometimes it just throws off the whole balance and you end up with a mess. honestly, i've tried a few "hacks" like that and half the time i just regret not leaving things alone. you're not alone in feeling like simple is better most of the time.
