Tweaking old family recipes like that can lead to some seriously great discoveries, doesn't it?

It can, but sometimes the magic is in not changing them. My grandma's biscuit recipe falls apart if you swap the lard for butter. The texture goes all wrong. Those old instructions were tested a thousand times. I've learned to make it perfect as written before trying any tweaks.

Yeah, but you have to know the rules before you can break them. If you change a recipe before you even know how it's supposed to turn out, you're just guessing. You won't know if your change made it better or worse. Getting it right first is the only way to make a real improvement later. Otherwise you're just making a different, probably worse, thing.
