My cousin tried my kimchi and asked if I was trying to 'pickle cabbage with ghosts' because of the bubbles.

He stared at the jar on my counter in Chicago for a full minute, then said 'It's breathing, man,' and refused to try it again for six months.

That "it's breathing" line is perfect. I read somewhere that the bubbles are a good sign, it means the good bacteria are doing their job. It's basically the kimchi version of a sourdough starter being alive. My first batch freaked me out too, I thought I'd messed it up bad.

Did my first batch bubble so much I thought it was trying to escape, lol.

Wait, how long did you actually let it sit before you told him it was done? I've had people do the same thing, thinking bubbles mean something's wrong, but honestly that's the best sign you can get. If you really want to prove it's safe, next time pull a little bit out right in front of him and eat it straight up. The look on his face when you don't keel over is usually enough. Also, if the bubbles freak him out that much, just burp the jar once a day so it doesn't look like a science experiment.
