Shoutout to wide mouth jars for making my kraut way easier
I used to use those narrow mouth mason jars for fermenting sauerkraut but getting the cabbage packed in tight was a nightmare. Switched to wide mouth quart jars last month and now I can actually fit my fist in there to press things down without making a mess. Anyone else find that changing one piece of gear made a big difference in their ferments?

Started packing my kimchi in wide mouth jars last year and it made a huge difference too. The real game changer for me was switching to glass fermentation weights that fit perfectly in wide mouths. Those plastic lids with airlocks are nice but I just use regular mason jar lids and burp them once a day. Never had a mold issue as long as I keep everything below the brine level.

Honestly, I was always skeptical about wide mouth jars for this kind of thing. Figured the extra air space would just cause issues. But hearing this actually makes a lot of sense, might have to try it out with my next batch.
