Just hit 500 tacos sold in a single day at the Portland night market
My truck, El Jefe, had a line that never dropped below 20 people from 5 PM until we closed at 2 AM. I had to send my helper on three separate runs for more tortillas and carnitas. Has anyone else broken a personal record that made you rethink your prep setup?

Had to send my helper on three separate runs" sounds like a failure to plan, not a record to celebrate. That's just poor management and lost sales. A good prep setup means you never run out.

Running out of stuff in the middle of a crazy rush is just part of the game sometimes (even if it hurts to admit). My cousin's pizza place had a night where the high school football team all showed up after a win, and they completely burned through their mozzarella by 8 PM. The whole "perfect prep" idea sounds great on paper, but you can't always predict a line around the block. That scramble to find more supplies before you lose the crowd is a special kind of panic.
